10 Takes on Corn Muffins!

Hi! Amanda here - I recently had big dreams of making a from-scratch corn muffin recipe with blueberries and brie from one of my favorite creators, Half Baked Harvest. All of her recipes are incredible. However, as the time passed I just didn't have the time to make the recipe. I did, however, have a box of Jiffy corn muffin mix in my pantry.

I made the muffin mix per the box instructions, with CT Grown egg & milk from my weekly delivery service, The Modern Milkman. I added fresh blueberries from Scantic Valley Farm and brie from the grocery store. The muffins came out incredible, lasting only one day in our house!

This may seem minor, but with everything we all have going on these days, let's give ourselves a dang BREAK. It's OK to use muffin mix sometimes. It's OK to make the muffins from scratch because that's what you love to do. From this experience, I thought it would be fun to come up with CT Grown ingredients we can add to our pantry Jiffy when we are in a pinch but still want to support our local farmers.
