Summer Salads!

It’s dinner time. It’s hot. You don’t want to turn the oven on. You want to make something, but don’t want to go through a long tedious process. You want something quick & easy. You crave a refreshing, colorful meal, but don’t know where to start.

Does this sound like you? Sometimes in the summer, we crave these colorful meals, but don’t have the motivation or idea where to start. Try out some of these delicious summer salads that Stanton Marketing has for you! There is nothing better than a colorful salad on a hot, summer day. Make sure to check out your local farms and farmers’ markets to purchase your fresh vegetables, fruits, dairy, and beef products to use in your salad recipes! If you can’t make it out to a local farm, you can shop for some fresh local farm products right at your nearest grocery store.

Easy Cucumber Salad

Directions: 

  1. Slice cucumbers thinly (or to your liking) and add to bowl

  2. Add in red onion slices

  3. In a mason jar or small bowl, whisk together apple cider vinegar, water, sugar, salt, and pepper

  4. Shake & add dressing over the cucumber & onion

  5. Keep in the fridge until ready to serve!

Ingredients:

  • 2 cucumbers

  • 1 red onion (sliced)

  • ⅓ cup apple cider vinegar

  • ¼ cup water

  • 1 tablespoon granulated sugar

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper


Caprese Salad

Directions: 

  1. Slice the tomatoes and mozzarella 

  2. Add a tomato slice to a plate, then add mozzarella slice on top. 

  3. Continue alternating in a layered pattern until all ingredients are used up

  4. Add the basil in between the layers

  5. Drizzle balsamic (or balsamic reduction) over the top 

  6. Sprinkle with salt & pepper

  7. Serve & enjoy!

Ingredients:

  • 3 large tomatoes, sliced

  • 8 ounces mozzarella cheese, sliced

  • Handful of fresh basil leaves

  • Salt & pepper to taste

  • Balsamic


Steak Chimichurri Dense Bean Salad

Directions: 

  • Season your flank steak and let sit for 10 minutes

  • Heat grill to high and add flank steak. Cook for 3-4 minutes on each side for medium rare

  • Let the steak sit while you make the rest of the salad

  • Finely mince the shallot and garlic

  • Chop the parsley & cilantro

  • Soak up the liquid from the roasted red peppers and thinly slice

  • Add shallots, garlic, parsley, cilantro, and peppers into a bowl

  • Rinse and drain the chickpeas & white beans

  • Drain mozzarella balls

  • Add beans and mozzarella balls to the bowl

  • Cube the steak into small pieces and add to the bowl

  • Add in the olive oil, red wine vinegar, red pepper flakes, salt, and lemon juice

  • Toss & enjoy!

Ingredients

  • 1 lb. flank steak

  • Salty steak seasoning of your choice

  • 1 shallot

  • 1 bunch of parsley 

  • 1 bunch of cilantro

  • 1 garlic clove

  • ½ cup roasted red peppers

  • 1 can garbanzo beans 

  • 1 can white beans

  • Container of mini mozzarella balls

  • ¼ cup red wine vinegar

  • Juice of 1 lemon

  • Pinch salt & red pepper flakes
